I usually don't ship out of the country but I have a request to ship to Australia. Can I add a country to ship to after my auction has a bid?

I've haven't done exactly what you're asking, but you should be able to add a ship to country to your current auction. What you can do for sure is add the prospective bidder's name to your Buyer Requirements Exemption List.
http://pages.ebay.com/help/sell/buyer-requirements.html#exemption_list (http://pages.ebay.com/help/sell/buyer-requirements.html#exemption_list)
That will allow him/her to bid despite any general restriction you've place on your listing.

I could add a country to the auctions without a bid but not to the ones with a bid. But I did the Exemption List which is a better solution anyway.
Once again the Froggers have come through.

I shipped a train set in a large box there with no problem.
The box was 2 feet long and over 2 feet tall.
I ship there ALL the time and haven't had a problem yet.
They are very good bidders usually.
